Nau’o’in Jallof Din Hausawa Na Gargajiya (Dafa-Duka) Jollof Din Shinkafa, Jollof Din Taliyar Hausa, Jollof Din Dankali, Jollof Din Wake

Gabatarwa

Bayan ɗaukar fate a matsayin abinci da Bahaushe ya yi, yana kuma sarrafa shi cikin sigar da ake kira dafa-duka. Dafa-duka dai wata dabara ce daga cikin dabarun samar da abinci wanda ake haɗa dukkanin kayan haɗin abincin cikin sanwa guda yayin da aka zo dafawa. Kasancewar Bahaushe a kullum basirarsa da hikimominsa sukan ƙara haɓaka, yakan samu sauye-sauye da dama a ɓangarorin abincinsa na gargajiya da kuma na zamani. Wannan ya sa ci gaban zamani a ɓangagarorin abinci da abubuwan sha suka gaza yin nisan da za su yi wa tunanin Bahaushe ɓatan dabo.

Kashe-Kashen Dafa-Duka

Dafa-duka ta kasu kashi-kashi kamar yadda sauran nau’o’in abinci suka karkasu. Kodayake, dafa-duka cimaka ce da ta sha bamban da yadda ake yin ta a da da kuma yadda ake yin ta a yanzu. Wannan ya faru ne a sanadiyyar ci gaban zamani da kuma samun wasu dabaru da hikimomi daga baƙin al’ummu. Ga kashe-kashensu kamar haka:

A lokutan da suka shuɗe, idan za a yi abinci nau’in dafa-duka, akan niƙa tumatur da tattasai da tarugu da albasa gaba ɗaya. Daga nan, sai a soya mai da jajjagen tare da kayan yaji gaba ɗaya. Idan ya soyu, sai a yi sanwa a saka su tare da gishiri. Idan sanwa ta tafasa za a ɗauko Shinkafa kowace iri (walau ta Hausa ko ta gwamnati). Haka za a bar ta kan wuta zuwa lokacin da ta dafu.

A ƙarƙashin 23.1.3 da ke babi na ashirin da uku, an yi bayanin dafa-dukan shinkafa da wake a zamanance. Bambancin da ke tsakanin nauo’in dafa-dukan gargajiya da ta zamani bai wuce na kayan haɗi da yanayin sarrafawa ba. Kayan haɗin da ake amfani da su a ta gargajiya ba su da yawa idan aka kwatanta su da ta zamani.

Dafa-Dukan Wake (Jollof Din Wake) Na Gargajiya

Ita ma wannan nau’in dafa-duka ana yin ta ne kamar yadda ake yin sauran nau’o’in dafa-dukan da aka ambata a baya. Sau da dama akan tafasa waken tare da ‘yar kanwa. Bayan ya tafasa, sai a zubar da ruwan sannan a ɗora sanwar dafa-dukan. Hikimar zubar da ruwan na farko ba ta wuce ta sabunta shi ba saboda baƙin da na farko kan yi a dalilin sanya kanwar da aka yi.

Dafa-Dukan Dankalin Hausa

a. Dankali                   

b. Gishiri 

c. Kayan miya             

d. Ruwa

Ana yin dafa-dukan dankali kamar yadda ake yin ta doya, wadda tuni aka yi bayanin ta a baya a ƙarƙashin 9.1.5. Bambancin kawai shi ne, a nan ana sanya dankali ne a maimakon doya.

Dafa-Dukan Taliya (Jollof Din Taliya) Na Gargajiya

Kasancewar taliyar gargajiya ta bambanta da ta zamani, saboda ita taliyar gargajiya ana murza ta ne da wani nau’in inji (injimi) da hannu. Bayan an kwaɓa garin alkamar, akan mummurza ta da hannu domin a sanya a injin da yake samar da siraran taliyar irin yadda ake buƙata. Daga nan sai a shanya ta bushe. Da irin wannan nau’in taliyar ce ake dafa-dukan taliya a gargajiyance. Kayan haɗin wannan nau’in dafa-duka ba su da wani yawa, ba su wuce su:

i. Daddawa   

ii. Kayan miya (idan an ga dama)      

iii. Mai

iv. Ruwa        

v. Taliyar gargajiya                      

vi. Yaji

Yadda ake dafa-dukan shinkafa haka ake na taliya. Adadin ruwan da ake sanyawa a taliyar kaɗan ne idan aka kwatanta da wanda ake sanyawa a shinkafa. Dalili kuwa shi ne, shinkafa ta fi shan ruwa da ɗaukar lokaci kafin dafuwa sama da taliya.

Tsokaci

Dafa-duka cimaka (abinci) ce da ta tara abubuwa da yawa, kamar dai yadda aka ga bayanin su a sama. Daɗin daɗawa, akwai wasu nau’o’in dafa-dukan da za a iya samu a ƙasar Hausa bayan waɗannan da aka bayar, musamman idan aka yi la’akari da yadda kullum ake samun sababbin ilimomi ga al’umma a fannonin rayuwa daban-daban, ciki har da yadda suke samar da abincinsu na yau-da-kullum. 

The book “Cimakar Bahaushe” (Diets of the Hausa People) is a collection of 293 traditional and modern diets of the Hausa people. Detailed explanations of the recipes and ingredients are provided. Comments are provided on the areas of the Hausa land where specific diets are mostly found, the age categories of people that usually use it, as well as the scientific impact of some of the diets to human biology.  Data is collected from interviews with different categories of people including:  i.                    Food sellers within the Hausa land: Mainly to have an idea of recipes on the diets.  ii.                  People of older age: Mainly to have insights on traditional diets of the Hausas.  iii.               Hausa scholars: Mainly to verify and justify the validity of the information obtained as well as provide further expert explanations on the diets.  Moreover, over two hundred (200) pieces of literature were reviewed to have better insight on the topic in question as well as get scientific and professional clarifications on some key concepts relevant to the research. The pieces of literature cover major relevant phenomena such as diet and hunger. Others are on the Hausa land and the Hausas.  The book contains thirty-three (33) chapters. Chapter one is the main introduction in which a concise explanation is provided on the Hausas, their history, their land, social life, and transformations due to globalization, acculturation, and modernity. Chapter two detailly discusses the concepts of diet and food from the Hausa point of view. That includes the meaning and the usage of diets in some Hausa works of literature both verbal and written (i.e. prose, poetry, proverbs, etc.).  Chapters three and four discuss the sources of Hausa diets and their forms accordingly. Chapters five to seventeen discuss some traditional Hausa diets including hard and soft ones. Chapter eighteen concentrates on the influence of modernity and globalization on Hausa diets. It has been discovered that there have been some significant changes in the Hausa diets ranging from recipes to kitchenettes.  Chapters nineteen to thirty-two discuss modern Hausa diets. Some traditional diets are still retained with little modifications, while on the other hand, there are a lot of new ones. Chapter thirty-three discusses “hunger” from the Hausa point of view. The relationship between hunger and food is examined. Additionally, the use of hunger in various Hausa literary works is studied. It is concluded that hunger is like a disease whereby its cure is food.  7th November 2022
