Ɗan Tama-Tsitsi

Kayan haɗin da za a tanada:

i. Garin ƙwame/Ɗan kuka

ii. Garura

iii.  Suga

Ana samun ƙwame busasshe a fasa, sannan a daka har sai ya yi gari, sai a tankaɗe a cire ’ya’yan da zare-zaren da ke ciki. Daga nan za a tanadi suga da garura (garura na da launuka mabambanta) da kuma suga. Za a jiƙa su wuri guda gabaɗayansu. Damun da za a yi musu zai kasance mai ɗan kauri-kauri. Za a riƙa ɗiba ana ƙullawa ƙanana-ƙanana a cikin leda.

Ƙwanƙwalati (Kakan Daɗi)

Kayan haɗin da za a tanada:

i. Suga

ii. Tsamiya ko lemon tsami

Yadda ake samar da ligidi haka ake samar da kakan daɗi. Bambancin kawai shi ne, ba a sanya kakan daɗi cikin sanho. A maimakon haka, ana sanya shi ne cikin ƙwanƙwalati, wato marfin lemon kwalba. Wannan ne ma ya sa ake kiran sa ƙwanƙwalati.

Alewar Madara (Tuwon Madara)

Kayan haɗin da za a tanada:

a. Madara Kwata

b. Ruwa

c. Suga

Za a samo suga da madara kwatankwacin kwata. Sugan za a ɗora shi ne a wuta, sannan a zuba ruwa ɗan kaɗan. Tun kafin ya narke yake sauya launi, sai a zuba wannan madara a ciki. Haka za a ci gaba da juyawa har sai ya haɗe gaba ɗaya. A gefe a samu tire a shafa mai a samansa sannan a juye wannan tuwon madara. Bayan ya ɗan huce kaɗan, sai a riƙa tsaga shi da wuƙa ko wani abu mai kama da wannan. Ana yin sa ƙanana-ƙanana.

Garin Ɗan Buɗiɗis/Garin Buɗus

Kayan haɗin da za a tanada:

a. Bombita

b. Madara 

c. Suga

d. Ɗiyan ƙwame ko waken suya

’Ya’yan cikin ƙwame ake ɗorawa a wuta cikin tukunya a soya ba tare da mai ko ruwa ba. Za a yi ta juya su ne kawai cikin tukunyar. Daga nan za a daka shi har sai ya yi laushi. Sai kuma a zuba wa dakakken garin madara da bombita da suga. Shi ma ana ƙullulle shi ne a cikin leda ko takarda. Wani lokaci ana amfani da waken suya a maimakon ɗiyan ƙwame.

Gugguru

Kayan haɗin da za a tanada:

a. Filebo

b. Madara

c. Masara

d. Suga

Za a gyara masara sannan a sanya ta cikin tukunya kan wuta ba tare da an sanya komai ba. Za a riƙa gaurayawa har sai ta tsattsage gaba ɗaya. Daga nan za a sauke ta, sannan a sanya filebo da madara ta gari tare da suga. Za a gauraya gaba ɗaya su game ko’ina. Ana sanyawa cikin leda ko takarda ko ma roba domin sayarwa.

Baba Dogo

Kayan haɗin da za a tanada:

a. Gyaɗa

b. Suga

c. Tsamiya

Za a soya gyaɗa a fece, sannan a kai markaɗe. A gefe guda kuma za a ɗora suga cikin tukunya a saman wuta a bar shi har sai ya yi ja. Za a zuba tsamiya kaɗan cikin wannan suga. Bayan sugan ya koma ruwa-ruwa, sai a zuba wannan markaɗaɗɗiyar gyaɗa ciki a yi ta juyawa har sai ya yi jawur gaba ɗaya. Daga nan za a shafa mai a kan faranti sannan a juye shi. Za a riƙa ɗiba ana mulmulawa dogi-dogi (wato masu tsayi ba dunƙulallu ba). Wannan ne ma ya sa ake kiran sa da suna baba dogo. 

Fitsarin Abiyola

Kayan haɗin da za a tanada:

a. Fanta

b. Jolijus

Fanta ake saya tare da joli jus. Sai a jiƙa wannan joli jus, sannan a riƙa haɗawa da fanta. Ana samun leda irin ta lalle wadda tana iya jawuwa ta ƙara tsayi ba tare da ta katse ba. Ciki ake sanya fanta kaɗan, sannan sai a saka jiƙaƙƙen joli jus a ɗaure. Wannan shi ake kira fitsarin Abiyola.

Ƙamƙam/Kantun Gana

Kayan haɗin da za a tanada:

a. Gyaɗa

b. Suga

c. Tsamiya 

Gyaɗa za a soya a fece, sannan a ɗan daddaka ta sama-sama. A gefe guda kuma za a sanya suga cikin wuta. Bayan ya yi ja sai a zuba wannan gyaɗa ciki. Za a yi ta juyawa har sai ya haɗe gaba ɗaya. Daga nan sai a shafa mai kan tire a juye ciki. Bayan ya bushe ne za a riƙa ɓaɓɓalla shi daidai adadin girman da ake buƙata.

Suya

i. Garin fulawa           

ii. Gishiri         

iii. Kayan yaji

iv. Magi                       

v. Mai             

 vi. Ƙwai          

vii. Ruwa                  

  viii. Tarugu

Za a kwaɓa fulawa da gishiri, sannan a mulmula ta curi-curi. A gefe guda kuma, za a fasa ƙwai a sanya masa gishiri da magi tare da jajjagen tarugu. Za a ɗora mangyaɗa a saman wuta, bayan ya yi zafi, sai a riƙa ɗauko wannan mulmulalliyar fulawar a riƙa sanyawa a cikin ƙwan sannan a riƙa soyawa cikin man. Da zarar an kammala wannan, to an samu suya kenan.

Karashiya (Ka Fi Amarya)

a. Mai

b. Ƙwai

c. Ƙwai da ƙwai/Awara

Da farko, za a yanka awara/ƙwai-da-ƙwai a shanya. Bayan ya bushe, sai a ɗora mai a wuta sannan a a fasa ƙwai a gefe guda. Za a riƙa sanya wannan busasshen awara a cikin ƙwai ana soyawa tare da mai. 

The book “Cimakar Bahaushe” (Diets of the Hausa People) is a collection of 293 traditional and modern diets of the Hausa people. Detailed explanations of the recipes and ingredients are provided. Comments are provided on the areas of the Hausa land where specific diets are mostly found, the age categories of people that usually use it, as well as the scientific impact of some of the diets to human biology.  Data is collected from interviews with different categories of people including:  i.                    Food sellers within the Hausa land: Mainly to have an idea of recipes on the diets.  ii.                  People of older age: Mainly to have insights on traditional diets of the Hausas.  iii.               Hausa scholars: Mainly to verify and justify the validity of the information obtained as well as provide further expert explanations on the diets.  Moreover, over two hundred (200) pieces of literature were reviewed to have better insight on the topic in question as well as get scientific and professional clarifications on some key concepts relevant to the research. The pieces of literature cover major relevant phenomena such as diet and hunger. Others are on the Hausa land and the Hausas.  The book contains thirty-three (33) chapters. Chapter one is the main introduction in which a concise explanation is provided on the Hausas, their history, their land, social life, and transformations due to globalization, acculturation, and modernity. Chapter two detailly discusses the concepts of diet and food from the Hausa point of view. That includes the meaning and the usage of diets in some Hausa works of literature both verbal and written (i.e. prose, poetry, proverbs, etc.).  Chapters three and four discuss the sources of Hausa diets and their forms accordingly. Chapters five to seventeen discuss some traditional Hausa diets including hard and soft ones. Chapter eighteen concentrates on the influence of modernity and globalization on Hausa diets. It has been discovered that there have been some significant changes in the Hausa diets ranging from recipes to kitchenettes.  Chapters nineteen to thirty-two discuss modern Hausa diets. Some traditional diets are still retained with little modifications, while on the other hand, there are a lot of new ones. Chapter thirty-three discusses “hunger” from the Hausa point of view. The relationship between hunger and food is examined. Additionally, the use of hunger in various Hausa literary works is studied. It is concluded that hunger is like a disease whereby its cure is food.  7th November 2022
